Cold Mountain Kyoto White Miso is aged 2-3 weeks, contains 60% less sodium. Flavour has a dessert-like sweetness and light, sweet fragrance; it is best used in mayo, salad dressings or light sauces. Typically made from soybeans fermented with a large percentage of rice, giving it a range of white to beige colour. Miso has been used for flavouring dishes for over 2000 years in Asia because of its deep umami flavour. The fermatation process in making miso provides many health benefits.
